SPINACH KNISHES

 

10 boxes frozen chopped spinach (Publix)

5 bags frozen whole leaf spinach (Publix)

3 eggs

1 ½ - 2 feta cheese (Vigio) container

2 eggs beaten with a little oil

Salt and pepper

 

1.        Defrost spinach and squeeze out all the water

 

2.        Put into large bowl as you squeeze

 

3.        Add eggs (3)

 

4.        Add Cheese

 

5.        salt and pepper

 

Mix all together

 

Cut Filo into thirds make triangle

 

Lay onto pans and coat with egg and oil mixture

 

Bake 20 to 30 minutes or until lightly brown on top

 

Serve with lemon squeezed on top

 

Add salt and pepper, if you need to

 

Serve with hard boiled eggs and Greek Olives

 

Oven 350 degrees
