BANANA BREAD

 

Prep time 10-15 min

Baking time 50-60 min

Equipment:  9x5x3 inch loaf pan, measuring spoons, cups, large bowl, medium bowl, spatula, cooling rack, electric mixer is optional

 

2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup butter (1 stick) softened

¾ cup granulated sugar

2 eggs

1 ½ cup bananas mashed (about 3 med)

½ cup walnuts, coarsely chopped

 

1.      Preheat over to 350, lightly grease the bottom only of loaf pan

2.      In medium bowl, mix flour, baking powder, baking soda and salt.  Set aside.

3.      In large bowl, using a sturdy spoon or electric mixer, cream the butter and sugar until thoroughly combined and fluffy (about 1 minute)

4.      Add the eggs and beat until smooth.  Mix in bananas

5.      Blend the dry ingredients until just combined

6.      Add walnuts.  Don’t over mix.  The batter will be thick and lumpy

7.      Scrape batter into the prepared pan.  Smooth the top with the spatula

8.      Bake 50-60 minutes, or until toothpick inserted in center comes out clean

9.      Cool 5 minutes.  Loosen sides from pan and remove.  Cool completely on rack before slicing.
