ZUCCHINI VEGETABLE DISH (IT'S A MESS TO MAKE BUT SO WORTH IT) IT WAS ONE OF MOM'S BEST
1 Large package of zucchini (6to 8) 1 Large tomato diced 1 Medium onion diced 1 Cup brown sugar (never white) Oil Salt & Pepper
In a saucepot add the diced tomato, onion, salt and pepper.
Cut zucchini into strips about 1/4 inch thick.
Fry all strips on both sides until golden, the darker the better (try not to burn them).
As they get done add them directly to the pot right on top of the tomato and onion.
When completed add brown sugar, and water to cover.
Cook at simmer until soft and a little thick. It will be a little watery anyway because zucchini is full of water. Adjust sweetness by adding more brown sugar if needed.
